Steak House Shrimp Salad with Creamy Dressing

Steak House Shrimp Salad!

I am NOT a seafood lover…at all! Sometimes people try to convince me that seafood is so yummy, “You just have to get past the smell they say”. I have never figured out why a person would smell some food and say, “That stinks, I think I will try it and see if it tastes good”. That is crazy!!

There is a steak house in town that our veterinarian used to take us to. A salad very similar to this one is served there. Obviously, I was skeptical. Since, I convince my kids to try just one bite I thought I should do the same. I’m glad I did because it is really good.

Steakhouse Shrimp Salad! Elegant enough for classy dinners...simple enough for everyday!

Of course, I came home and tried to recreate it. This salad explodes with a combination of flavors. Although I must admit…it’s the Parmesan cheese and dressing that keeps me coming back for more! I served it with our Christmas prime rib this year. And I’m all fired up about eating it for lunch when the kids go back to school. It’s quick and actually pretty healthy too!

Shredded Lettuce!

Tear some green lettuce into bite sized pieces.

Layer the lettuce in a bowl or on individual plates. Sprinkle a few thawed out salad shrimp.

Healthy Shrimp Salad

Sprinkle sliced almonds on top.

Hearty shrimp, crunchy almonds and salty Parmesan cheese make an extra flavorful salad!Here comes the best part…sliced Parmesan cheese. Lot’s of it! That’s the best part! A good amount of freshly ground black pepper gives it such a nice flavor. Shrimp salad and an amazing dressing!There you have it! That’s the salad. If you wanted to be all healthy you could make a nice vinaigrette. Or, you can make the dressing that I  made.

For the dressing whisk together mayo, sugar and red wine vinegar. I have substituted half of the mayo with plain Greek yogurt before and it works just fine.

Ingredients

  • DRESSING:
  • 1 c. mayonnaise may substitute half amount with plain Greek yogurt
  • 3 T. sugar
  • 3 T. red wine vinegar
  • freshly ground black pepper
  • SALAD:
  • green leaf lettuce torn in bite sizes
  • sliced almonds
  • frozen salad shrimp thawed
  • Parmesan cheese sliced
  • sliced scallions optional

Instructions

  • Whisk all of the dressing ingredients together. Vinegar and sugar may be adjusted to your taste.
  • Place torn lettuce, salad shrimp, sliced almonds, Parmesan cheese and scallions in a bowl of on individual plates. Use the amounts of salad ingredients that you like. Drizzle with dressing and serve.

Christmas Boys!

Here are a few of my favorite pics from Christmas! Days like this remind me why I love my life so much! Yes, those red pajamas are the old fashioned union suit pajamas with the trap door in the back. The poor big boss still needed to go finish up a few things at work after the Christmas Eve festivities. So he was all tucked into his socks ready to put his boots back on!

Of course this year we did the traditional Christmas Eve pajamas and thank goodness this year Mrs. Claus remembered me!

All the boys got the same gift. So we had to do the 1-2-3 open! Like I have said a million times before…only if I could freeze them like this! Merry Christmas!

      I bought the red plates at Pier 1. I love the cute little yellow flower in the middle! Then again, I am a cute dishes addict!
