Soft Chewy Snickerdoodle Cookies

Hands down, this is the BEST Soft Chewy Snickerdoodle Cookies recipe! These thick cookies are a little crispy on the edges and perfectly soft and chewy on the inside. Plus they’re loaded with cinnamon chips just to be sure you get plenty of warm cinnamon flavor in every single bite!

Just so you know, I don’t always declare my recipes to be “hands down the best” very often. I don’t take that title lightly. I’ve been on the hunt for the BEST Soft and Chewy Snickerdoodle Cookie for quite awhile now.

Let me translate that for you….my family has tried dozens of snickerdoodle cookie recipes in the past couple months. We’ve had flat ones, crispy ones, fat ones, and pretty much everything inbetween. These Soft Chewy Snickerdoodle Cookies are hands down the BEST snickerdoodle cookies!

Can I make bakery style snickerdoodles at home?

YESSSSS! Those little soda and cookie shops are the whole reason I became obsessed with trying to make the perfect snickerdoodle in the first place! You guys I live and hour from the nearest grocery store, and soda shop, and cookie shop, and bakery, and everything else in the world. When you live out here in the sticks you’ve gotta learn how to make your own stinking cookies because there’s no delivery service out here. Ya, my sister gets hot, just out of the oven cookies that are the size of your face delivered straight to her door in the afternoons. I think she’s spoiled!

Anyway, these cookies aren’t the size of your face like the ones from those fancy little shops, but other than that they are spot on. Even better!

Do I need to chill these snickerdoodle cookies?

When I want cookies, which is pretty much all the time, I want them right now. There’s nothing worse than settling on a cookie recipe only to find out I’m supposed to chill the dough for a few hours, or even worse…overnight! Aghhh! Are you feeling my pain? Are you with me?

There is NO chilling time required for this cookie recipe! Just whip the dough up and get to baking! Your welcome!

Can I make snickerdoodle cookies without rolling the dough?

Are you starting to get the hint that I’m pretty much the least patient person on Earth? Well, I am. Maybe it’s because I ligit have way too much to do and don’t have time to stand around rolling dough into perfectly shaped balls when it’s not even necessary.

So here’s the deal. This is my favorite cookie scoop {affiliate link}, it’s the perfect size. Use the cookie scoop to make evenly sized cookies. If you’d like you can roll each cookie to make it a pretty ball.

If not, just drop the cookie straight from the cookie scoop into the cinnamon and sugar mixture. Add a few more scoops of cookie dough to the sugar mixture, then gently swirl the cinnamon sugar mixture container a little bit until the cookie dough is coated. You might need to flip the cookies over to make sure they’re coated on the whole cookie.

Set the cookies on a parchment baking sheets {amazon affiliate link} lined baking sheet and stick them in the oven.

Either way, skip the bakery or little specialty cookie shop and whip up a batch of these Soft Chewy Snickerdoodle Cookies as soon as possible! Afterall, they are hands down, the BEST cookies and you don’t want to miss out on that!

Soft and Chewy Snickerdoodle Cookies

Ingredients

For the Cookie Dough

  • 1 c. butter room temperature
  • 1 c. granulated sugar
  • 1 c. powdered sugar
  • 2 large eggs
  • 2 tsp. vanilla
  • 3 1/4 c. flour
  • 1/2 tsp. Kosher salt
  • 1 tsp. baking powder
  • 1 c. mini cinnamon chips

Cinnamon Sugar for Rolling Cookies In

  • 1/4 c. granulated sugar
  • 1 T. cinnamon

Instructions

  • Preheat oven to 375 degrees. Line baking sheets with parchment paper, or spray with nonstick baking spray. Set aside.
  • Cream butter and sugars until smooth and fluffy, about 2 minutes.
  • Add eggs and vanilla. Cream again until well combined and fluffy, about 2 minutes.
  • Add flour, salt, and baking powder. Using mixer stir just until combined. Dough will be thick, if needed you may use a Tablespoon or two of milk. I don't add milk and they turn out perfectly, but if you think they are way too thick, you can add a bit of milk. Start with just a little bit though.
  • While mixer is running add mini cinnamon chips and mix until mixed throughout. Set aside.
  • Mix granulated sugar and cinnamon listed for making cinnamon and sugar for rolling. I like to put mine in a shallow, round platic container.
  • From cookies into balls, about 2 Tablespoons in size. Roll each cookie ball in cinnamon and sugar mixture and set on baking sheet.
  • Bake cookies for 10-12 minutes. 11 minutes is the perfect amount of time in my oven. You don't want to over-bake these cookies!
  • After taking cookies out of the oven let them sit on the baking sheet for a couple minutes. Remove to a wire rack to completely cool. Store in an airtight container up to a couple days.

Notes

Cinnamon chips can be found in the baking isle by the chocolate chips. They are usually the same size as mini chocolate chips. You can also buy cinnamon chips from Amazon {affiliate link}. However, if you can't find them, you can add a Tablespoon of cinnamon to the dough instead.

    OMG, I can imagine plenty of flavor inside of these thick cookies are a little crispy on the edges and perfectly soft and chewy on the inside each bite :P. May I get the hint to add a little flour star anise to increase the flavor in this recipe?
