Today I had every intention of creating and videoing a fun little Cinco de Mayo recipe for you lovely readers! I had all my ingredients ready and was just starting when Justin called me and said he needed my help!
We are building some feed mangers for our cows at our desert property and it’s always been my job to level the posts when we are setting them. Basically, I get to stand there with the level and make sure each post is completely straight up and down.
It’s not a hard job, but you have to be particular to do it. I’m not sure if being able to see when things are straight is a blessing or a curse. When I’m sitting in a Sunday School Class and the tablecloth is crooked I can’t even focus on the lesson. It’s kind of a problem.
When I build fences I like them to be straight as an arrow so I’m the lucky one that gets to set the posts. Most of the post we set were metal and I don’t have any pictures of those posts or me setting them because I was too busy working up an appetite!
We postponed lunch today because the boys didn’t have time to stop to eat. When we finished up it was about 6:00 p.m. So technically maybe we didn’t postpone lunch but skipped it completely!
By time I got home everyone was hangry and my go to quick meal is tacos so that’s what we had. You guys I’m a chips and salsa addict and thought we all deserved a little something extra to go with our stand by tacos so I whipped up Cream Cheese Salsa!
Cream Cheese Salsa is so easy to make and so yummy, even my starving fence building boys thought it was worth the couple minute wait. I’m not even kidding you when I say it takes less than 5 minutes to throw together! It’s a good thing too or they might not have survived!
I used to make this all the time when I was in high school and I always used regular cream cheese. I had a tub of Jalapeno Chive Cream Cheese in my fridge and decided to try it today! Good choice! It was spot on!
The trick to making Cream Cheese Salsa is making sure you let the cream cheese come to room temperature before you start making it or else it will get lumpy and you don’t want that!
Since my family owns a dairy farm I gotta put a little plug in there for dairy products! I’ve never found a single recipe that wasn’t improved by adding cream or cheese! This one is no exception!

- 1 8 oz. pkg. Cream cheese, room temperature (Use full fat, or Jalapeno Chive Cream Cheese)
- 1 c. salsa
- Cilantro for garnish, optional
- Beat cream cheese until smooth.
- Add salsa and beat until combined.
- You can serve immediately but it will be a little thinner consistency. After about 3 hours of refrigerating it will get thicker.
- Garnish with chopped cilantro if desired.
