Banana Bars are anything but the ordinary thanks to the addition of cinnamon. Cinnamon cream cheese frosting really is icing on the cake! Top it off with a cherry and you will almost think you have a banana split!
You know, bananas are not my favorite food. In fact, I really don’t even like them very much at all. The other day I was browsing through the recipes on my blog and noticed that I actually have several banana recipes. There is the Banana Cream Cheese Pie, Banana Split Bites, Strawberry Banana Shortcake Bread, Creamy Banana Bread, and Strawberry Banana Bread. I had to ask myself why I have so many banana recipes if I really don’t even like bananas? I concluded that I have lots of recipes because I need a way to get rid of all of the over ripe bananas. And I’m telling you, these bars are delicious. Bananas and all.
I love the warm spiciness of cinnamon in these banana bars. Adding Greek yogurt makes me feel all healthy about eating dessert! Since cream cheese is one of my favorite foods, ever, I’m digging the cinnamon cream cheese frosting too! I also love that this recipe is easy and makes a huge pan! My kids love the maraschino cherries on top. You have to admit they are cute and fun!
Get those overripe bananas out and whip up these Cinnamon Banana Bars! Yum!
- BARS:
- 3 ripe bananas
- ½ c. butter, softened
- 1 c. sugar
- ½ c. brown sugar
- 2 eggs
- 1 c. vanilla Greek yogurt
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- CINNAMON CREAM CHEESE FROSTING:
- ¼ c. butter, softened
- 1 8 oz. pkg. cream cheese, room temperature
- 1 tsp. vanilla
- 1 tsp. cinnamon
- dash salt
- 1 pound powdered sugar (more if needed)
- BARS:
- Preheat oven to 350 degrees.
- Beat bananas, butter and sugars together until smooth.
- Add eggs one at a time.
- Fold in vanilla and yogurt.
- Mix in flour, salt, cinnamon and soda.
- Spread in greased 10 x 15 pan. Bake for 20-22 minutes or until bars are set.
- Cool. Frost with cinnamon cream cheese frosting.
- FROSTING:
- Cream butter and cream cheese together until smooth.
- Add vanilla, cinnamon, powdered sugar and dash of salt. Beat until smooth.
- If consistency is too thick add milk a little bit at a time. If consistency is too thin add more powdered sugar.
Love the dash of salt in the frosting. All frosting recipes should call for it.
