Virgin Strawberry Sangria with Whipped Cream

25.4 ounces sparkling apple cider chilled 2 cups strawberries divided 2 Tablespoons sugar ¼ cup water Optional Garnishes Whipped cream either in an aerosol can, or freshly whipped heavy cream Fresh mint sprig optional
Heat one cup sliced strawberries, sugar, and water to a boil. Puree strawberries and syrup. Cool.
Pour chilled sparkling cider into a glass pitcher. Add the strawberry puree. Slice remaining strawberries and add.
Let chill for at least two hours or serve immediately.
Serve with a generous amount of whipped cream.
Garnish with additional strawberry slice or mint sprig if desired
