Foolproof Wheat Bread

This is the perfect whole wheat bread recipe. It is so soft and moist. I timed myself and it took 30 minutes hands on time, plus baking.

  • 2 1/2 cups warm water
  • 1/4 cup oil
  • 1/2 cup honey
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon dough enhancer
  • 1 1/2 teaspoon lemon juice optional
  • 5 cups ground wheat flour
  • 1 1/2 Tablespoons instant yeast should be added after the flour
  • 1-2 cups additional flour


  • Put all ingredients, except additional flour, in a mixer bowl. I use my Kitchen Aid and it works great.
  • Mix on low speed until combined. Quickly add enough additional flour for dough to pull half way up the sides of the bowl.
  • Mix on low speed for 5 minutes. The dough will completely pull away.
  • Add 1-2 Tablespoons of water if needed to keep dough soft. (I did not need any additional water)
  • Oil hands and counter. Divide dough into 2 large loaves and one small loaf. That's where I use the "bowl".
  • Shape into loaves and put in greased bread pans.
  • Let rise until doubled. About 45 minutes.
  • Bake at 350 degrees for 30-35 minutes.
  • If using a thermometer it should read 200 degrees.
