Chocolate Zucchini Picnic Cake
A moist chocolate zucchini cake with a crunchy brown sugar, chocolate chip and walnut topping. It's one of my favorite ways to use the abundance of my zucchini crop!!
- 1/2 cup butter room temperature
- 1/2 cup oil
- 2 eggs
- 1 3/4 cup sugar
- 1 tsp. vanilla
- 1/2 cup buttermilk
- 2 1/2 cups flour
- 4 T cocoa
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2 1/2 cups grated zucchini
- 1/2 cup brown sugar
- 1 cups semi-sweet chocolate chips
- 1 cup chopped walnuts
Cream together butter, oil, eggs, sugar and vanilla.
Stir in buttermilk.
Add flour, cocoa, soda, salt and cinnamon to bowl or sifter.
Mix dry ingredients with creamed ingredients until combined.
Fold in grated zucchini.
Spread in a greased 9 x 13" pan.
Sprinkle brown sugar, walnuts, and chocolate chips over the top of cake. Do not stir.
Bake 325 degrees for 35-40 minutes.
