Chocolate Zucchini Picnic Cake

A moist chocolate zucchini cake with a crunchy brown sugar, chocolate chip and walnut topping. It's one of my favorite ways to use the abundance of my zucchini crop!!

Ingredients

  • 1/2 cup butter room temperature
  • 1/2 cup oil
  • 2 eggs
  • 1 3/4 cup sugar
  • 1 tsp. vanilla
  • 1/2 cup buttermilk
  • 2 1/2 cups flour
  • 4 T cocoa
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 1/2 cups grated zucchini
  • Topping:
  • 1/2 cup brown sugar
  • 1 cups semi-sweet chocolate chips
  • 1 cup chopped walnuts

Instructions

  • Cream together butter, oil, eggs, sugar and vanilla.
  • Stir in buttermilk.
  • Add flour, cocoa, soda, salt and cinnamon to bowl or sifter.
  • Mix dry ingredients with creamed ingredients until combined.
  • Fold in grated zucchini.
  • Spread in a greased 9 x 13" pan.
  • Sprinkle brown sugar, walnuts, and chocolate chips over the top of cake. Do not stir.
  • Bake 325 degrees for 35-40 minutes.
