A spinach grilled cheese sandwich can be made in 10 minutes with frozen or fresh spinach! Adding spinach makes it healthy and nutritious! My family loves adding bacon, artichokes, tomatoes, mushroom, and garlic!
Saute spinach in a saucepan. Melt a little bit of olive oil or butter in a saucepan over medium heat. Add fresh spinach and stir occasionally until it's sauteed. Season with salt and pepper. It will quickly wilt and reduce in size. Remove from the pan and wipe the pan clean.
Generously butter the outsides of two pieces of bread. Set one slice buttered side down on a cutting board, plate, or whatever you want.
Add half of the grated cheese to the unbuttered side of the bread.
Set the sauteed spinach over the layer of cheese. Spread it out evenly.
Add the remaining grated cheese. Some of it's going to fall off and that's okay!
Heat a skillet over medium heat. Add the spinach cheese sandwich to the skillet. Cook until the bottom is golden brown. Flip and repeat on the other side.
Remove to a cutting board. Let rest for a couple of minutes. Slice.

Frozen Spinach: Use frozen spinach from a bag instead of from a box. Saute frozen spinach as directed in the instructions. Variations:
