Peanut Butter Banana Brownies

These Banana Brownies are loaded with all the good stuff; peanut butter and chocolate chips! If you have extra ripe bananas skip making banana bread this time and go for something chocolate instead! Trust me, you won’t regret it!

Ingredients

  • 1 cup chocolate chips semi-sweet
  • 1 cup light brown sugar packed
  • 1/2 cup butter room temperature
  • 2 bananas ripe
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1 cup flour
  • 1 cup peanut butter chips divided
  • 1/2 cup walnuts, chopped optional

Instructions

  • Preheat oven to 350 degrees. Grease a 9×9 inch baking pan, or line it with aluminum foil.
  • Melt chocolate chips in a microwave-safe bowl by microwaving for 1 minute. Stir.
  • Cream butter and sugar for 2 minutes.
  • Add eggs and vanilla. Beat for 1 minute.
  • Add cooled chocolate. Beat until combined.
  • Add baking powder, salt, and mashed bananas. Beat until combined.
  • Add flour and beat only until combined. Don’t over-beat.
  • Add walnuts, and half of the peanut butter chips. Stir.
  • Pour into prepared baking pan. Sprinkle the top with remaining peanut butter chips and chocolate chips.
  • Bake for 40-45 minutes. Cool completely. Cut into squares. Store at room temperature in an airtight container.

Notes

As bananas ripen they get sweeter. Be sure to use overripe bananas for the best results!
You can add extra chocolate chips to the top of the brownies if you want! Toffee chips are also amazing!
