Ingredients

  • 12 Rhodes frozen dinner rolls white or wheat
  • 1/4 cup butter
  • 2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/2 tsp garlic paste
  • 1/2 cup Parmesan cheese

Instructions

How to make overnight dinner rolls (refrigerator rolls)

  • Grease a 9-inch baking dish with non-stick baking spray. (You can also use an 8"x11" pan)
  • Thaw frozen rolls in the microwave for 2-3 minutes or until rolls are barely soft enough to cut. Cut rolls into quarters (kitchen shears are the easiest way to cut them). Set in greased baking dish.
  • Melt butter in the microwave, about 30 seconds. Add Italian seasoning, salt, and garlic. Stir.
  • Pour melted butter mixture over rolls in the prepared baking dish. Toss to coat.
  • Sprinkle half of the Parmesan cheese over rolls. Gently toss to coat.
  • Sprinkle remaining cheese over rolls.
  • Tightly cover the baking pan with plastic wrap that has been sprayed with non-stick baking spray.
  • Refrigerate overnight (or during the day). In the morning (or later in the day) the rolls should be about doubled in size.
  • Remove rolls from the fridge and let sit at room temperature for about 15 minutes.
  • Preheat oven to 350 degrees.
  • Bake rolls for 20-25 minutes.
  • Brush with additional butter, and sprinkle with extra cheese if you want! Trust me you want to!

Method to rise frozen rolls quickly

  • Follow steps 1-6 above.
  • Preheat the over to the lowest temperature it will go.
  • Turn the oven off.
  • Fill a baking pan with boiling water and set it in the oven.
  • Place the rolls in the oven, while it is turned off.
  • The rolls will rise in about 30-45 minutes.
  • Once the rolls are doubled in size remove the water from the oven. Preheat oven to 350 degrees with the rolls still in the oven
  • Follow steps 11 and 12 above.

Notes

Substitutions
  • Garlic - Use 1/2 tsp garlic powder or 1 garlic clove minced
  • Rolls - wheat, white, or use a loaf of frozen bread dough
  • Italian seasoning - you can also use 1/2 tsp EACH oregano, parsley, and basil
To make with whole rolls:
I originally made this recipe using whole dinner rolls and NOT cutting them into pieces. You can still do that if you'd like. Simply melt the butter, add seasonings, and toss FROZEN rolls in the butter mixture. Sprinkle with Parmesan cheese. Let rise in a greased pan, covered with plastic wrap. Bake at 350 degrees for about 20-25 minutes.
