1romaine lettuceIceberg, green leaf, red leaf, and all great too
1cupcherry tomatoes
1/2yellow pepperdiced
1/2cupolivessliced
1/2cupzucchini ribbonsoptional
6ouncessalamior pepperoni
1/2 cuppita chipsor pita crackers
1/2cupshredded mozzarella
1/4cupgrated parmesan cheese
cracked pepper
basil
For the Vinaigrette
2TBSPred wine vinegar
3TBSPolive oil
1/8tspsugar
1/2tsporegano
1/2cracked black pepper
dash salt
Instructions
For the Vinaigrette
Add all ingredients to a jar and shake until combined. Store in the refrigerator for up to a week.
For the Salad
Wash, dry, and chop lettuce. Prepare all the vegetables. If you are preparing ahead of time, store vegetables in individual containers until you're ready to serve.
To assemble salad, layer ingredients, except parmesan cheese and crackers, in a bowl and toss. Drizzle salad with vinaigrette and toss. Top with remaining parmesan cheese and crackers.

This salad can be easily customized to make as few or as many servings as you'd like.You can also add whatever ingredients are your favorites! This is a great recipe for using whatever is leftover in your fridge. Use diced ham, pepperoni, grilled chicken, etc. Add your favorite vegetables!
