No Bake Compost Cookies is a super easy dessert recipe that’s sweet and salty thanks to a handful of simple ingredients; potato chips, pretzels, graham crackers! Then there’s peanut butter and chocolate! This simple no-bake version of classic compost cookies recipe can either be made in the microwave or on the stovetop! They’re easy…and addicting!
Line a baking sheet with parchment paper. Set aside.
Chop whatever add-ins you want in your cookies. Scour the pantry. You’ll need 4 cups.
Combine peanut butter and chocolate chips in a microwave-safe bowl.
Microwave for one minute. Stir. Continue microwaving and stirring in 30-second intervals until chips are completely melted and smooth.
Add chopped add-ins. Stir to combine.
Scoop with a medium sized cookie scoop forming cookies.
Refrigerate for about 30 minutes.
Store in an airtight container in the refrigerator.
Notes
My favorite part about this recipe is that you can use whatever add-ins you like as long last they add up to 4 cups.Measure add-ins after they have been chopped, crushed, etc. These cookies are best stored in the fridge.
