Ham and Cheese Breakfast Quesadilla are loaded with diced ham, hard boiled eggs, and plenty of gooey chees! This is a hearty on the go breakfast for super busy mornings!
Lay one tortilla in skillet. Sprinkle grated cheese, ham, and eggs over tortilla. Then sprinkle another layer of cheese on. Top with remaining tortilla.
Fry in skillet until tortilla is golden brown. Carefully flip tortilla. Let me know if you figure out how to do this without spilling all the yummy inside ingredients! If you do spill...just scoop them up and put them back inside the tortilla!
Continue cooking until second side is golden brown.
Remove to a cutting board and cut into wedges.
Serve warm! Garnish as desired
