Spinach Salad with Eggs and Bacon

This spinach salad with eggs and bacon is a quick and easy salad recipe that's loaded with all the good stuff; bacon, hard-boiled eggs, cheese, and more! It has a super easy, healthy, tangy dressing that gives it an extra kick of flavor!

Ingredients

For the Spinach Salad

  • 12 ounces baby spinach
  • 4 hard boiled eggs
  • 4 strips bacon
  • 1 avocado
  • 1/2 cup mozzarella cheese other cheese can be substituted
  • 1 tomato diced
  • 1 Tablespoon parsley optional

For the Dressing

  • 2 Tablespoons red wine vinegar
  • 1 Tablespoon dijon mustard
  • 1 Tablespoon honey
  • 1/4 teaspoon Kosher salt
  • to taste pepper
  • 3 Tablespoon olive oil

Instructions

  • Prep the ingredients. Cook and crumble slices of bacon. Hard boil, peel, and dice eggs. Chop or slice veggies. Grate or cube cheese.
  • Mix the dressing. Add vinegar, dijon mustard, honey, salt, and pepper to a blender. Blend until smooth. While the blender is running on low slowly drizzle the olive oil in until it’s smooth. Taste. Adjust seasonings as needed.
  • Make the salad. Add the baby spinach to a large bowl and drizzle with vinaigrette. Toss to coat. Place eggs, bacon, and veggies in a large salad bowl. Sometimes I like to layer individual salads on serving plates. That way everyone can add whatever ingredients they like. 

Notes

Substitutions: Feel free to substitute ingredients. Add other kinds of meat, cheese, and vegetables. 
Make Ahead Instructions: I like to dice and prepare all the vegetables ahead of time, except the avocado which needs to be done at the last minute so it doesn't brown. You can cook and crumble the bacon ahead of time. Mix the dressing ahead of time, but wait until you're ready to serve to dress the salad. You will need to mix the dressing again to combine it.
