Sausage and Cheddar Cornmeal Pancakes
Sausage and Cheddar in a cornmeal pancake drizzled with maple syrup is the perfect breakfast. It's an easy way to serve breakfast meat without all the hassle.
Servings 48 pancakes
- 1 cup cornmeal
- 1 1/2 cups flour
- 1 1/2 tsp. soda
- 1 tsp. salt
- 2 Tbsp. sugar heaping
- 2 eggs
- 1 1/2 cups buttermilk
- 1 cup milk
- 1/2 cup oil
- 1 1/2 cups fried and crumbled sausage
- 1 cup shredded cheddar cheese
Mix cornmeal, flour, soda, salt and sugar. Stir to combine.
Beat eggs. Add buttermilk, milk and oil.
Stir wet and dry ingredients together.
Stir in sausage and cheese.
Drop pancakes on a lightly greased griddle, over medium to barely medium high heat. Cook on first side and flip. Cook until done.
Serve with butter and maple syrup.
