Poached Eggs Bruschetta

Ingredients

  • 1 poached egg
  • 1 slice French Bread
  • butter
  • 2 slices mozzarella cheese
  • 1/2 to mato diced
  • 1/2 t. fresh basil julienned
  • Bruschetta Vinaigrette:
  • 1 T. balsamic vinegar
  • 1 t. olive oil
  • dash salt
  • a little freshly ground black pepper

Instructions

  • Poach egg.
  • Toast French bread either in toaster or butter and broil.
  • Layer sliced cheese over toasted bread. Melt under broiler, or in microwave.
  • Top bread and cheese with poached egg.
  • Sprinkle with diced tomatoes and basil.
  • Drizzle with Bruschetta vinaigrette.
  • Serve immediately.
