Bacon Quesadilla

Cheesy Bacon Quesadillas are like a fun Mexican twist on classic BLT sandwiches! Adding ranch amps up the flavor even more, and adding chicken makes it extra hearty! Kids love this 5-minute recipe for lunch or snacks!

Ingredients

FOR THE QUESADILLAS

  • 1 flour tortilla
  • 1 tsp butter
  • 1/4 cup grated cheddar cheese
  • 1/4 cup bacon
  • 1 Tbsp ranch dressing

TOPPINGS FOR SERVING

  • 1/2 cup lettuce
  • 1/3 cup diced tomatoes

Instructions

FOR THE QUESADILLAS

  • Melt butter in a skillet over medium heat. Be sure to use medium heat so the insides of the quesadilla will melt before the outside burns.
  • Place one tortilla in skillet.
  • Sprinkle cheddar cheese over tortilla in the skillet. Add crumbled bacon. Drizzle with ranch dressing.
  • Top with remaining tortilla.
  • Cook until the bottom of the quesadilla is golden brown. Then flip and repeat on the other side. It usually takes about 5 minutes.
  • Remove quesadilla from the skillet and transfer to a cutting board. Let rest for about a minute then cut in wedges.
  • Serve with shredded lettuce and diced tomatoes. You can also dip them in extra ranch if you'd like!

Notes

I like adding sliced or shredded chicken to these quesadillas. It's especially easy if I have leftover grilled chicken!
