Bacon Quesadilla
Cheesy Bacon Quesadillas are like a fun Mexican twist on classic BLT sandwiches! Adding ranch amps up the flavor even more, and adding chicken makes it extra hearty! Kids love this 5-minute recipe for lunch or snacks!

FOR THE QUESADILLAS

flour tortilla
1
tsp
butter
1/4
cup
grated cheddar cheese
1/4
cup
bacon
1
Tbsp
ranch dressing
TOPPINGS FOR SERVING

lettuce
1/3
cup
diced tomatoes
Instructions
FOR THE QUESADILLAS
Melt butter in a skillet over medium heat. Be sure to use medium heat so the insides of the quesadilla will melt before the outside burns.
Place one tortilla in skillet.
Sprinkle cheddar cheese over tortilla in the skillet. Add crumbled bacon. Drizzle with ranch dressing.
Top with remaining tortilla.
Cook until the bottom of the quesadilla is golden brown. Then flip and repeat on the other side. It usually takes about 5 minutes.
Remove quesadilla from the skillet and transfer to a cutting board. Let rest for about a minute then cut in wedges.
Serve with shredded lettuce and diced tomatoes. You can also dip them in extra ranch if you'd like!
Notes
I like adding sliced or shredded chicken to these quesadillas. It's especially easy if I have leftover grilled chicken!
