This jam has such a fun combination of flavors. Thanks to four different kinds of berries and and infusion of fresh orange zest! I love this jam during the whole Holiday Season, starting in November all the way through December! Add a loaf of bread and it makes a perfect neighbor Christmas gift!
Servings 7 cups
- 1 c. strawberries
- 1 c. raspberries
- 1/2 c. cherries
- 1/2 c. cranberries
- zest of one orange
- 1/4 c. lemon juice
- 1 box MCP Pectin
- 1 c. corn syrup
- 4 1/2 c. sugar
Mash berries or use processor to finely chop. Measure prepared fruit.
Stir in lemon juice.
Gradually add pectin and mix thoroughly. Set aside for 30 minutes stirring every 5 minutes.
Stir in corn syrup and stir well.
Measure sugar. Gradually add sugar and stir constantly until sugar is dissolved and no longer grainy.
Ladle into clean jars.
Let stand at room temperature for 24 hours. Refrigerate for immediate use or freeze for up to a year.
