Chocolate Zucchini Cookies

Super soft Chocolate Zucchini Cookies are bursting with chocolate chips! Excellent for packing in lunches and they freeze well too!

  • 1 2/3 c. flour
  • 1/3 c. cocoa
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 c. butter softened
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/2 c. shredded zucchini
  • 2 c. chocolate chips


  • Preheat oven to 375 degrees
  • In a large mixing bowl cream butter and sugar together. Add vanilla and egg. Beat again until combined.
  • In a separate bowl add flour, cocoa, salt, and cinnamon. Stir to combine.
  • Add dry ingredients to wet ingredients. Beat until combined.
  • Add grated zucchini and chocolate chips. Stir until combined. Dough will be thin.
  • Drop dough onto parchment lined cookie sheets. I used a 2 Tablespoon cookie scoop.
  • Bake 10-11 minutes. Let cool on cookie sheet for a couple minutes then remove to wire rack to completely cool.
