Strawberry Cheesecake Cookies

Strawberry Cheesecake Cookies are really easy to make since they begin with a cake mix! This recipe makes soft, and thick cookies that are packed with strawberry flavor!

Ingredients

  • 8 ounces cream cheese room temperature
  • 1/2 cup butter room temperature
  • 1 whole egg
  • 1 cup white chocolate chips
  • 15 ounce box strawberry cake mix
  • 1/4 cup powdered sugar optional
  • 1/8 cup Valentines sprinkles optional

Instructions

  • Using an electric mixer, beat cream cheese and butter together until smooth and fluffy. Add egg and mix again.
  • Add dry cake mix and mix until combined. Stir in chocolate chips.
  • Chill cookie dough in the refrigerator for 60 minutes. Or, scoop cookies and drop them on a parchment lined cookie sheet. Freeze for 15 minutes. The cookie dough should be firm and not sticky.
  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper or lightly grease.
  • Scoop cookies into 1 ½ inch balls. Roll until smooth. Roll in powdered sugar and then in sprinkles if desired.
  • Place cookie balls onto the prepared cookie sheet.
  • Bake for 10-12 minutes. Cool on baking sheet for 2 minutes before removing to cooling rack.

Notes

Variations: It's fun to switch up the cake mix flavors in this recipe. Yellow cake mix, red velvet, and spice cake mixes are great options! It's also fun to add semi-sweet chocolate chips and different kinds of nuts. 
I like rolling the cookies in white chocolate chips to make sure they have chocolate chips on the tops of the cookies after baking. That's optional though!
