Strawberries & Cream Valentine’s Day Bark

Fun and easy Valentines candy! - Little Dairy on the Prairie
I’m such a succor for all the cute holiday candy that fills the supermarket year round.  Something about all cute packaging and yummy seasonal treats makes each holiday come alive. I happened upon these cute little strawberry marshmallow hearts the other day and just had to buy them. I had no idea what I was going to make with them, I just knew they were cute and I wanted them!

Strawberries & Cream Valentine's Day Bark!!! Candy bark and quesadillas have something in common to me. They both are the perfect home for any leftovers laying around. I make “leftovers” quesadillas all of the time. We had some pretty tasty ones too! Candy bark is also a perfect home for “leftover” cookies and candy! Besides happening upon some really tasty “leftover” combinations…quesadillas and candy bark are super easy to make.

This bark is bursting with strawberry flavor thanks to Berry Burst Oreos, these fancy strawberry marshmallows and a splash of strawberry extract. Top it all off with as much candy as the bark will hold. I think I’m in love!

My seventh grader now thinks that he needs to “share” some of this candy with a particular someone on Valentines Day! He always tries to win the ladies hearts with my treats! Honestly, he’s cute enough he can win them over without my help! Although, I’m sure the treats won’t hurt!!

 Creamy white chocolate combined filled with cookies in the middle give it a great crunch. Loading it with festive candies sends it over the top!! Besides all of that, I’m always happy to have one more no bake treat in my recipe box.

Ingredients

  • 1 12 oz. bag white chocolate chips
  • 1/2 tsp. strawberry extract
  • 1 15.25 oz package Berry Burst Ice Cream Oreos
  • Freeze dried strawberries optional
  • Assorted Valentines Candy
  • Valentines Sprinkles

Instructions

  • Line a baking sheet with parchment paper.
  • Chop Oreo's into pieces. Mine where about pea sized.
  • Melt white chocolate chips in the microwave at half power. Microwaved time will vary with different microwaves. I cooked mine for 2 minutes. Cook in 30 second increments stirring after each 30 seconds. Stir until smooth.
  • Add strawberry extract, Oreos and freeze dried strawberries, if you are using them, to melted chocolate. Stir to combine.
  • Pour onto parchment paper and spread. Mine was about 3/8" thick.
  • Sprinkle the top with whatever Valentines candy you have chosen. Add sprinkles if desired.
  • Let cool to set. Break into pieces. Store in a cool place.

    This is a great idea for using up leftover seasonal candy. I usually just bring a box of it to the shop and the workers clean it right up. But maybe I should rethink and put it all in bark and eat it myself.
