“Simple” is exactly what these Simple Sweet and Sour Meatballs are! Simply make them earlier in the day and baking them right before dinner. As the meatballs bake, a crazy good sauce thickens and simmers around the meatballs!
Weeknights are hectic at my house. When I say that do you feel like I am singing your song? Well, if you have kiddos most likely your nights are hectic too. Really, I only have about four hours a night to help them get homework done, read for 20 minutes, exercise, practice the piano, chores, shower and eat. That’s not including the other extra-curricular activities.
It seems to work best for me if I have dinner already in the slow cooker or ready to throw in the oven. That way when the boys walk through the door I’m ready to help them. These meatballs are perfect for a crazy schedule. I make the meatballs, whip up a sauce and pour it over the meatballs earlier in the day and pop them in the oven about 45 minutes before we eat. Everyone in the family loves them too! Double score for me!
Simple Sweet and Sour Meatballs smell amazing, taste amazing and take an amazingly small amount of time to whip up. I serve them with cheesy mashed potatoes or rice. Three Cheese Mashed Potatoes are my favorite make ahead mashed taters!
Simple Sweet and Sour Meatballs
Ingredients
- MEATBALLS:
- 1 pound lean ground beef
- 3/4 c. oats
- 2 eggs beaten
- 1/2 c. water
- 1 t. season salt
- 1/2 t. onion powder
- 1/2 t. cracked black pepper
- 1 T. Worcestershire sauce
- SAUCE:
- 3/4 c. brown sugar
- 1/4 c. cider vinegar
- 1/4 c. water
- 2 t. prepared mustard
- 3/4 c. barbecue sauce
- 1 T. Worcestershire sauce
Instructions
- Spray 9" x 13" baking dish with cooking spray.
- Mix all meatball ingredients together until combined. I use my hands.
- Form meat mixture into meatballs. I use a cookie scoop and make my meatball rustic. It's faster than rolling them out! Place meatballs in prepared baking dish.
- Stir together all sauce ingredients.
- Pour sauce over meatballs.
- Bake uncovered, at 350 degrees for 40 minutes. Or, refrigerate and bake later at 350 degrees for about 50-55 minutes. The sauce will thicken as they bake.
I love these meatballs, I have actually been craving them lately. I will for sure need to make them soon!
In my book meatballs are way better than a meatloaf, and sweet and sour one’s are the best.
Just like you, I used to say, if you have dinner planned and ready before lunch, it is going to a be a much better night.
