Awhile ago Justin decided that he was going to try to be a little more healthy. Part of his “healthy” routine was going to include eating a poached egg on low calorie bread for breakfast. He ate this for breakfast for several mornings. He likes poached eggs, and so do I. So it worked out great for our family.
You know me though. I can’t leave well enough alone. It’s just how I work. So I started tinkering with the poached egg. You know creating lots of poached egg options just to switch it up a little. I had been wanting to try this Poached Egg Bruschetta option that I dreamed up while I was mowing the lawn. (I can’t be helped.) Last Saturday I tried it out and I am so glad I did. It’s divine. I’m just sorry I didn’t try it earlier. Don’t wait and be sorry like me. Make it today. You will be glad you did.
Whisk balsamic vinegar, olive oil, salt and pepper together.
I didn’t show you a picture of how to poach an egg. The easiest way I have found to poach eggs is in this handy dandy microwavable egg poacher. It’s not very fancy, but who cares about fancy at any hour before 8:00 a.m.? Here’s the link if you want to buy a microwavable poacher. So poach your egg however you like to do that. Then slice, butter and broil a piece of French bread in the oven. (Or stick it in the toaster and butter it.)
After you toast the bread layer a few slices of mozzarella cheese on top. Return to the oven and broil just until melted. (Or, after you toast the bread and butter it, layer with cheese and put in the microwave until it’s melted.)
Set egg on top of cheese. Try not to pick off and eat all of that yummy melted cheese. If you can’t resist and decide to pick it off, at least choose to pick it off of your husbands. He wants to eat healthier anyway. So, you would actually be doing him a favor!!
Sprinkle with diced tomatoes and fresh basil.
Drizzle with balsamic vinaigrette. Serve immediately.
Turn a simple breakfast into a fancy and simple breakfast by adding a little bruschetta to your poached eggs.
- 1 poached egg
- 1 slice French Bread
- 2 slices mozzarella cheese
- ½ tomato, diced
- ½ t. fresh basil, julienned
- Bruschetta Vinaigrette:
- 1 T. balsamic vinegar
- 1 t. olive oil
- dash salt
- a little freshly ground black pepper
- Poach egg.
- Toast French bread either in toaster or butter and broil.
- Layer sliced cheese over toasted bread. Melt under broiler, or in microwave.
- Top bread and cheese with poached egg.
- Sprinkle with diced tomatoes and basil.
- Drizzle with Bruschetta vinaigrette.
- Serve immediately.
