Mexican Mac and Cheese is one of "grab a few ingredients from the pantry" kind of meals! It's quick and easy and of course kids go crazy for it!
Recipe type: Casserole, Quick Meal, Pasta
Cuisine: Mexican
Serves: 3-4
  • 1 box macaroni and cheese (plus ingredients to prepare as directed on the box)
  • 1 c. ground beef, browned (you may substitute a can of chicken if desired)
  • ½ c. sour cream
  • ½ pkg. taco seasoning
  • 1 c. Monterey Jack cheese, shredded
  • 1 c corn chips
  • Optional toppings:
  • diced tomatoes
  • additional sour cream
  • cilantro
  • sliced olives
  1. Make mac and cheese according to package instructions.
  2. Add ground beef or canned chicken if you really want to keep it to a pantry meal.
  3. Add taco seasoning, and sour cream.
  4. You could stop right there and eat this as is, or you can put it in a baking dish.
  5. Top with a little, or a lot of grated cheese,
  6. Sprinkle crushed corn chips over the casserole.
  7. Bake at 350 degrees just until the cheese is melted, the casserole is warmed through, and the chips are a little browned. I baked mine for 10 minutes.
