Fiesta Mexican Dip is the dip to make if you want to bring we-are-the-champion kind of yummy food to the next tailgaging party! It's easy to make and is always gone before the end of the first quarter!

  • 1 pound ground beef, browned and crumbled
  • 2 10 oz. cans RO*TEL Origional Diced Tomatoes and Green Chilis
  • 1 15.25 oz. can corn, drained
  • 1 15 oz. can black beans, rinsed and drained
  • 2 10.5 oz can cream of chicken soup
  • 1 1.25 oz. taco seasoning
  • 2 cups Monterey Jack cheese, shredded
  • Tortilla Chips for serving
  • Optional Toppings; guacamole, olives, sliced green onions, cilantro, sour cream
  1. Preheat oven to 350 degrees, or get slow cooker out.Add all ingredients except cheese, chips, and toppings to a large mixing bowl.
  2. Stir everything together.
  3. Pour half of mixture into a slow cooker or a greased 9”X9” baking dish.
  4. Top with grated Monterey jack cheese.
  5. Pour the other half of mixture over cheese layer.
  6. Bake for 30 minutes, or cook on low in slow cooker for up 2-3 hours.
  7. Serve warm with plenty of tortilla chips! Of course you can get fancy and serve this with sour cream, chopped onions or cilantro, and guacamole!
