Fresh Garden Salsa

If you are a salsa lover you have to try Garden Fresh Salsa! It's a little bit like a pico de gallo, but it's packed with lots of veggies straight from the garden!

  • 1 small zucchini (about a cup)
  • 1 medium carrot (about a cup)
  • 2 medium tomatoes (about 2 cups)
  • ½ purple onion (my family doesn't love onions as much as I wish they did so I only used about ¼ a cup.
  1. Chop zucchini into small pieces. I just pulse the food processor a few times.
  2. Chop tomatoes into small pieces.
  3. Chop carrots into small pieces.
  4. Chop onions into small pieces.
  5. Add all chopped veggies to a bowl.
  6. Sprinkle Tajin Clasico Con Limon (They called it lime salt in Mexico. I used about 1 T.)
  7. Sprinkle salt in to taste (I used about ½ tsp)
  8. Stir.
  9. Serve with chips or any other Mexican food!
