Creamy Banana Bread with a cinnamon and sugar topping. It makes a perfect start to breakfast.

Serves: 2 loaves
  • 3 mashed bananas
  • 2 teaspoons vanilla
  • 2 eggs
  • 1½ cups brown sugar
  • ½ cup plain Greek yogurt
  • ⅔ cup oil
  • 2 cups flour
  • ¾ teaspoon salt
  • ¾ teaspoon soda
  • 1 teaspoon cinnamon (optional)

  1. Preheat oven to 325 degrees
  2. Mash bananas in mixing bowl.
  3. Add vanilla, eggs, brown sugar, yogurt, and oil to the bananas. Cream together.
  4. Put flour, salt and soda in a sifter or mix in a bowl. Add cinnamon if you are using it.
  5. Mix dry ingredients into creamed mixture. Mix slowly only until combined.
  6. Pour into greased or parchment paper lined bread pans.
  7. Sprinkle tops of loaves with cinnamon and sugar.
