Coconut loves are going to go crazy over these super soft Coconut Cream Cookies! Loading them with chocolate makes them even better!

  • ¾ c. butter, softened
  • ¾ c. brown sugar
  • ¼ c. sugar
  • 1 small pkg instant coconut cream pudding
  • 2 eggs
  • 1 tsp. coconut extract
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 2¼ c. flour
  • 1½ c. chocolate chips
  • ½ c. shredded coconut
  1. Preheat oven to 350 degrees.
  2. Cream butter and sugars together.
  3. Add eggs and coconut extract and beat for 2 minutes.
  4. Add pudding, flour, salt, and soda. Beat until combined.
  5. Stir in coconut and chocolate chips.
  6. Drop onto parchment lined cookie sheets. Bake 8-10 minutes. Be careful to not over bake.
  7. Let cool on wire rack for a couple minutes.
