You know those mornings when you wake up and you know you are going to need chocolate? Chubby Hubby Muffins are packed with not only chocolate, but peanut butter too! Throw bananas in the mix, and you have got it all!

  • 1 c. all purpose flour
  • 1 c. whole wheat flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ½ c. creamy peanut butter
  • 3 T. butter, softened
  • 1 c. brown sugar
  • 2 eggs
  • ¾ c. milk
  • 2 bananas
  • ½ c. semi sweet chocolate chips
  • ½ c. peanut butter chips
  1. Preheat oven to 350 degrees. Line muffin cups with paper liners.
  2. Mash bananas. Set aside.
  3. Beat peanut butter, brown sugar and butter until smooth.
  4. Add eggs, bananas and milk. Beat until smooth.
  5. Mix flour, salt and baking powder together in a separate bowl. Stir into wet ingredients only until combined.
  6. Fold in peanut butter and chocolate chips if desired.
  7. Spoon batter into muffin liners.
  8. If desired sprinkle tops with additional peanut butter and chocolate chips.
  9. Bake for 18-20 minutes.
  10. Cool in pans for 5 minutes. Remove to wire racks to completely cool.
