Creamy Chicken Tortilleni Soup is a fun new version of classic chicken noodle soup! This one is packed with vegetables, cheesy, and a blend of Italian spices! You are going to love this one!

  • 1 T. butter
  • 1 c. diced celery
  • ½ c. diced onion
  • 1 c. diced carrots
  • 4 c. chicken broth
  • 2 c. water
  • 1 can cream of chicken soup
  • ½ tsp. basil
  • ½ tsp. oregano
  • 2 c. shredded or diced chicken
  • 1 13 oz. pkg frozen cheese tortellini
  • salt and pepper to taste
  • 2 c. fresh spinach, chopped
  • 1½ cups grated cheddar cheese
  1. In a large stock pot saute celery, onion, and carrots in butter.
  2. Add remaining ingredients except for shredded cheese and spinach.
  3. Bring to a boil and boil for 9 minutes. Salt and pepper to taste.
  4. Add grated cheese and stir until melted.
  5. Add chopped spinach and stir.
  6. Serve.
