Breakfast Salad is one of my new favorite, delicious ways to start the morning! This is a savory salad recipe and is loaded with vegetables plus hard boiled eggs, cheese, and bacon!

Thanks to Rhodes Frozen Dough for sponsoring today’s post. As always, all opinions are my own! #Rhodes #frozendough

My middle child won’t eat anything that resembles salad or is green so I have to hide them in veggie smoothies. My youngest though, he begs for this salad for an after school snack! Yay for a child that actually asks for a healthy salad!

Eating salad for breakfast.

I’m guessing you’ve had fruit salad for breakfast before, but if you haven’t ever tried a vegetable salad for breakfast you’re missing out! It’s the perfect way to get a few servings of veggies in before you really even start your day.

If you just aren’t into eating salad for breakfast you can always serve this for brunch, lunch, or dinner. I’ve served it alongside a hamburger patty for dinner before and it seriously hit the spot!

What to serve with breakfast salad.

I don’t know about you, but after the holidays are behind us, I start craving vegetables, salads, and pretty much anything else healthy. But, then again I have a serious sweet tooth and know myself well enough to know I’m not going to survive without at least some sweets! My meal just isn’t complete without sweet and savory and I’m not going to beat myself up over it!

Besides satisfying my cravings, I always feel like salads need to be served with some kind of bread. My mantra when it comes to eating healthy is moderation. That’s why I love serving this salad with Rhodes AnyTime® Cinnamon Rolls! All you have to do is stick them in the oven and frost them!

Rhodes Bake N’ Serve has AnyTime® rolls in these flavors Orange Rolls, Caramel Rolls, Cinnamon Rolls with six rolls in an aluminum pan. That means no dishes, no rising, no remembering to thaw them. Or you can buy AnyTime® Cinnamon Rolls in a bag which makes it easy to make as many or few rolls as you’d like! These rolls are so fluffy and light and really couldn’t be easier.

Savory salad and sweet cinnamon rolls feel an awful lot like a balanced morning to me!

The sky is the limit here. Use your imagination. This is a great place to use up leftovers in the fridge too. I’ll give you some ideas, just for a place to start.

  • hard-boiled eggs, soft boiled eggs, or fried eggs would be great too!
  • crumbled bacon
  • diced ham
  • cheese, any variety will be good
  • avocados
  • scallions
  • tomatoes
  • herbs; cilantro, basil, parsley, etc.
  • broccoli
  • peppers

Ingredients

Breakfast Salad Ingredients

  • 4 cups spinach fresh
  • 4 eggs hard-boiled
  • 4 slices bacon fried
  • 1 avocado sliced
  • 1/2 cup mozzarella cheese other cheese can be substituted
  • 1 tomato diced
  • 1 TBSP parsley minced

For the Dressing for Savory Breakfast Salad

  • 3 TBSP lemon juice
  • 1 TBSP olive oil extra virgin
  • dash salt
  • dash pepper

Instructions

Assemble Salad

  • Make sure all salad ingredients are prepared; chopped peeled, diced, sliced, etc.
  • Add a layer of spinach to each plate.
  • Arrange the remaining salad ingredients over spinach on the plates.

To make the Dressing

  • Add lemon juice, olive oil, and a dash of salt and pepper to a small jar. Shake to combine.
  • Drizzle dressing over salad just before serving.

Notes

NOTE: Feel free to substitute ingredients. It’s fun to switch up the vegetables. See my post for suggestions.
NOTE: Other kinds of cheese would be equally as delicious! Try pepper jack to add a little kick, grated swiss cheese, cheddar, or Parmesan would all be great choices. I like to sprinkle a little Parmesan over the whole salad sometimes.
NOTE: This salad may also be assembled in a big serving bowl. I like to add it to plates just to make sure each plate gets a good amount of each ingredient.
NOTE: I like to dice  and prepare all the vegetables ahead of time, except the avocado which needs to be done at the last minute so it doesn’t brown. You can cook and crumble the bacon ahead of time. I always make extra bacon and use the leftovers for recipes like this salad. It makes assembly in the morning extra easy!
