I impatiently wait for my rhubarb to start growing every spring the same way I wait for my zucchini to start growing in the summer. Then when it starts producing there is no turning back. It kind of starts to overtake the garden and consequently pretty much every dish I make for a few weeks! I don’t mink though because rhubarb is so yummy!

- If the recipe includes fruit it is definitely a salad, or it can pass a breakfast! Fruit doesn’t count as dessert..EVER!
- If the recipe doesn’t include chocolate it just doesn’t fit in the dessert category!
- After eating fruity desserts you are entitled to at least one piece of chocolate!
It’s just the way we roll and it’s all my fault! I’m the addict. So when I say that this rhubarb Cobbler counts as a dessert you know it’s GOOD! In no way, shape, or form am I suggesting I wouldn’t serve Blueberry Rhubarb Dump Cake for breakfast I’m just saying it passed the dessert test with flying colors even though it includes fruit! That’s a big deal!
Summer is such a busy time of the year and the last place I want to be is stuck in the kitchen when the rest of the family is out on the farm. I’d way rather be out on the farm working, teasing my children, and singing songs to them while they work (which bothers them a lot) than being inside by myself!

Rhubarb Dump Cake Recipe
Rhubarb Dump Cake
Ingredients
- 4 cups rhubarb diced
- 21 ounce blueberry pie filling
- 3 ounce strawberry jello just the dry mix
- 1 cup lemon lime soda yes you get the drink the rest
- 18.25 ounce white cake mix just the dry mix
- 1/2 cup butter
Instructions
- Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with nonstick cooking spray.
- Spread diced rhubarb in the bottom of baking dish.
- Spread blueberry pie filling over rhubarb.
- Sprinkle dry Jell-o over pie filling.
- Pour soda over Jello.
- Sprinkle dry cake mix over fruit layer.
- Slice butter and set over cake mix layer.
- Bake 40-45 minutes. It's done when the cake mix layer is golden brown.
- Serve warm with vanilla ice cream or freshly whipped cream!
Notes
- Jello - You can also use cherry, blueberry, or raspberry jello.
- Cake Mix - I like white, but a yellow cake mix is a great option too.
- Rhubarb - Fresh or frozen
- Freshly whipped cream OR
- Vanilla ice cream

Is rhubarb one of those plants that won’t grow in Texas? It grows like a weed here so I didn’t realize it was hard to get ahold of in some areas. Hope you find some because it’s pretty awesome in this dump cake!

I’m so jealous you have plenty of fresh blueberries! How fun is that? You could search pinterest for a low sugar blueberry pie filling recipe and substitute that for the can of pie filling. I’ve noticed more and more varieties of pie fillings are popping up in the store. It looks like some of them are a little more like homemade pie filling too.
