Mississippi Pot Roast Recipe – Crockpot (completely falls apart)

Mississippi Pot Roast Recipe is the absolutely BEST slow cooker roast beef EVER! It’s made with 5 simple ingredients; roast, a package of au jus seasoning, a package of ranch seasoning, a jar of pepperoncini’s, and a cube of butter! The hardest part about this roast is getting it out of the crockpot without it falling apart! Now that’s a good problem if you ask me!

This recipe was updated in January 2019 to include new images and text. The recipe is the same, except I changed the name from Banana Pepper Roast and added instructions for cooking it in an instant pot and provided nutritional information. I’ve also learned sometimes this recipe is called Mississippi Mud Roast!

By now you probably all know that I am a carnivore. I just LOVE meat! And easy beef recipes are my very favorite!

I spent last weekend with my mom and sister and we had a blast together. We were busy shopping, visiting and catching up. So we ended up eating out the whole time I was there, which was fine with me. time for dishes. We ate some extra yummy pizza, which I will definitely be trying to recreate, sandwiches and Mexican food!

I love all of those things. But when I got home I knew that I needed to make some meat! Like I said…I’m an addict!

During the summer my sister-in-law gave me this recipe. I knew I had to try it for a few reasons.

  1. She isn’t a beef addict and she loved this, so I knew it had to be good.
  2. She had me all in when she said, “put a cube of butter on top of the meat”.

I made the recipe and it does not disappoint.  It’s a fun twist on the traditional roast! We will definitely be making this one again, and again!

Tips and Suggestions

LITTLE DAIRY ON THE PRAIRIE TIP:

  • Use a slow cooker liner to make clean up easy!
  • For this recipe you don’t really need to seer, or brown, the roast.
  • To make this recipe ahead of time, follow the recipe through step 4 then refrigerate it until it’s time to cook it. Sometimes I do this the day before and all that’s left is sticking it on the crockpot base.

You only need simple ingredients

what ingredients do I need to make mississipi roast?

  • Roast– Chuck roast is my favorite (learn all about it in my classic roast beef recipe). You can use whatever roast you want. It’s gonna cook low and slow until it falls apart anyway. This is a good place to use those less expensive cuts of meat.
  • Au Ju Gravy Mix – you only need the dry mix. Don’t prepare it.
  • Ranch Dressing Mix – dry mix only. Don’t make it into a dressing.
  • Banana Peppers or Pepperoncini Peppers – Either will work great! I use whatever is on hand. Banana peppers are a little milder, but pepperoncini peppers aren’t spicy or hot either.

Throw everything in the slow cooker.

  1. Add a roast to the slow cooker.
  2. Sprinkle dry ranch seasoning mix and dry au jus seasoning over roast.
  3. Slice 1 stick (1/2 a cup) of real butter and set on top of the roast.
  4. Pour a jar of banana peppers or pepperoncini peppers plus a little of the juice from the jar in the CrockPot right next to the roast.
  5. Slow cook roast for low for 6-8 hours, or on high for 4-6 hours.
  6. Remove from the crock pot…it will probably fall into pieces when you try to get it out of the crockpot! Success!
  7. Let rest for 10 minutes.
  8. Shred with two forks.

Can you make Mississippi Roast in the instant pot? Of course!

Follow the recipe exactly as you would if you were making it in the slow cooker, except put everything in the pressure cooker instead. Be sure to add at least 1/2- 3/4 a cup of juice from the peppers so it will build enough steam to pressurize. Cook on high pressure for 90 minutes.

NOTE: I prefer making roast beef in the slow cooker vs. instant pot. It’s typically a bit more tender and I like being able to do the prep work earlier in the day, then sticking it on the crockpot and not worrying about it until dinner time.

Here are a few super easy side dish ideas that will go perfectly with your roast beef dinner!

  • Three Cheese Mashed Potatoes – BONUS…these can be made ahead!
  • Glazed Carrots Recipe – quick and easy with maple syrup

My family literally survives on leftovers! We eat them several times a week because they make the BEST quick and easy meals! All of these recipes can be made with leftover Banana Pepper Roast.

  • French Dip Sandwiches – our favorite sammie

This roast couldn’t be any easier. It is perfect for Sunday dinner or those busy days when you aren’t home to get dinner ready. If you want to turn this roast into a one-pot wonder, add potatoes and carrots during the last few hours of cooking.

Banana peppers lend such a yummy flavor to this roast. And the butter makes it extra moist!

Ingredients

  • Let rest for 10 minutes.
  • Slice or shred with two forks.

Notes

  • Using a slow cooker liner makes easy cleanup.
  • To make ahead follow instructions through step 4 and refrigerate until you’re ready to cook it. I do this up to a day ahead of time.
  • Roast can be made in the instant pot. Be sure to add a little extra juice from peppers and pressure cook on high for 90 minutes.

    It was fun having you come and spend the weekend with us, and we got a lot done. It was fun eating out with you and can’t wait until you duplicate the pizza we had for lunch.

    I tried doing a roast this way and loved it too. Fast and Easy. I couldn’t find the banana peppers at the store I went to so I used a different kind. Now that I have seen the bottle you displayed I will know they can be found. Sure they would add a fun flavor to the roast.

    Loved the fall fabric and the texture it created under the plate.

    The next time you come over, we will cook instead of running errands and shopping, and we can share some love to you. You deserve a break, but plan to helping with the dishes.

    Amy, you make this look so pretty– I had to laugh. I just dump it all in. The peppers really are a yummy treat! I added them to some bbq spare ribs and my men loved the taste. Good recipe:)

    Just wanted to say that my husband doesn’t normally like roast, but he LOVES your recipe! He said it’s the best roast he’s ever had and keeps requesting it for dinner. Thanks for the great recipe! 🙂

    I made this last night and it was yummy! My kids loved it. I was worried that my kids wouldn’t like it because of the sweet peppers, but you can’t taste it:) I will use unsalted butter next time though..

      Heather, getting the kiddo’s to enjoy dinner is a never ending job! I love salt, a lot, so I’m was totally okay with salted butter but I’m sure it’s still amazing with unsalted!

      I’m sure this roast can easily be cooked in the oven instead of the slow cooker. However, I always cook mine in the slow cooker because it’s so easy and stays so moist.
