The combination of peanut butter, butterscotch, chocolate and sea salt makes these No Bake Chex Cookies irresistible! Thank goodness they are easy to make!
My friend, Kristy, made these cookies for a piano recital this spring. They were so cute, and I have to eat cute things. Sometimes I even want to eat my little boys cheeks! Anyway, the cookies were so yummy I just had to get the recipe. With the summer time coming up every girl needs a few more “no bake” treats up her sleeve!
I pretty much made them exactly how she said, except I added sea salt. Cuz sea salt and peanut butter should go had in hand. Don’t you think? Unfortunately for me I can’t resist the salty sweet combo. And…since I am going to swim lessons in a few weeks and need to fit in the swim suit I just bought, I will not be making these No Bake Chex Cookies. I can’t. If I did I know I would have to go buy a bigger swim suit and a girl has to draw the line somewhere! No more, No Bake Chex Cookies and no new swim suit! No cookies until after swim lessons that is! After that I don’t need to fit in my swim suit for awhile so cookie making and eating will be back to normal!
Anyway, if you have self control, or if you don’t need to fit in your swim suit anytime soon, or if you don’t care, or if you are one of the lucky ones who can eat anything you want and still fit in your swim suit…make these NOW! They are so dang good. Seriously, I would give myself a little pep talk while I was eating my salad at lunch and convince myself that I was only going to eat one cookie for dessert. Then that salty sweet got the best of me and as soon as everyone left the room I hurried and inhaled another one, or two! No wonder my stretchy swim suit isn’t stretchy enough!
I know you are going to love these. They were quick to make and so cute too! If you don’t have time to drop them you could always spread them in a 9 x 13 pan and make bars out of ’em. They won’t be as cute be equally as inhale worthy!
- 1 c. sugar
- 1 c. light karo syrup
- 1¼ c. peanut butter
- 6 cups corn or rice Chex
- ¼ tsp. sea salt
- 1 c. chocolate chips
- 1½ c. butterscotch chips
- sea salt
- Boil sugar and karo syrup.
- Remove from heat and add peanut butter and ¼ tsp salt. Stir.
- Pour over cereal.
- Drop with cookie scoop on parchment paper. Let cool. This doesn't take long.
- Melt chocolate chips and butterscotch chips in microwave until melted.
- Spoon and spread a little frosting over each cookie. Before chocolate hardens sprinkle with sea salt!
