Skinny Poolside Dip one of those appetizers you aren’t going to be able to stop eating! It’s full of amazing flavors, can be made ahead of time, and is skinny? What’s not to love!
Appetizers and finger foods are some of the best foods ever! Am I right? The only problem is most of them are full of all the good stuff, or are deep fried. That’s why they taste so darn good!
I’m always on the hunt for a dip that can be thrown in the “healthyish” category. Skinny Poolside dip actually has veggies so I’m automatically calling it “healthyish”!
Not to worry though, even though it has veggies the kids will still love it. Heck, even my husband likes this dip and you don’t want to hear what he has to say about peppers! Eeek!
NOTE: I originally posted this recipe in December of 2014. I’m updating the photos and adding a video. The recipe was just right already, so it hasn’t changed.
Can this dip be made ahead of time?
Yes! That’s one of my other favorite things about it! Make it up to a day before you want to serve it!
After a few hours of sitting the flavors have a chance to get used to each other and I think it makes it even better!
If you’re throwing this together at the last minute it will still be fantastic! Trust me! I eat about half of it the minute after I stir it together! So good!
What dippers should I serve this with?
There are so many options when it comes to dippers. We’ve tried lots of different things and my favorite is still corn chips. If you’re looking for other ideas check out these.
- Mini sweet peppers if you’re sticking with the healthy thing!
- Celery is another fantastic healthy option.
- Wheat crackers
- Tortilla chips
- Corn Chips
- Butter crackers
- I’ve never tried it but I bet it would be delish rolled up in a tortilla, like a pinwheel.

What’s happening on the farm?
Last week was the 4th of July, one of my favorite holidays! Of course we had to take care of the cows, but we let the boys take the afternoon off, and Justin quit working around 6 that evening! All they had to do that day was cut and chop feed for the cows, help a few cows that recenlty had babies and few cows that weren’t feeling well, and a few other odds and ends. It totally felt like a holiday because we actually took it easy!
We did take last Friday off, well we only worked until about 11:00 which is considered a day off around here. We took the boys and went kayaking in Island Park, Idaho. We also hiked, and explored the area. Oh, and we ate lots of yummy food too! It was a blast! Last night when we went to bed I told Justin that it felt so nice to take a couple days off. It was so nice and refreshing I actually felt like going back to work this morning! I think more days off should be in our plans! Now if I can talk those cows into cooperating!

You are going to love this dip! Of course it’s addicting to munch on with a bag of chips as an appetizer, or a snack. It’s also yummy for parties like New Years Eve, tailgating, or barbecues. I also love it as a side dish with my burgers!
Who cares what you eat with it…just eat it soon!
- 1 8 oz. package Greek Cream Cheese (You could use regular cream cheese)
- 1 pkg. dry ranch dressing mix
- 1 can corn, drained
- 1 small can diced green chili's, undrained (I used mild)
- 1 can diced olives
- 1 jalapeno, diced
- ½ red bell pepper, diced
- Corn chips or mini bell peppers for serving
- Mix softened cream cheese, ranch mix and green chili's together until smooth.
- Add drained corn, olives and jalapeno, and red pepper. Stir to combine.
- Serve with corn chips or sliced mini sweet peppers.
- Store leftovers in the refrigerator.
