Pumpkin Spice Caramel Chex Mix- You need to try this no bake, caramel covered Chex mix boasting all the flavors of fall! It’s easy and addicting!

Pumpkin Spice Caramel Chex mix is a new version of one of my very favorite Chex Mix recipes! Don’t get me wrong, I still love Winter Wonderland Chex Mix, and Sweet S’mores Chex Mix, but I have to admit this new fall version definitely hits the spot on chilly nights! It has all those cozy flavors of fall and did I mention it ha caramel! What else is there?

The other day I was in the car with my 12 year old and he was talking about who knows what. My boys exclusively talk about motors, engines (what’s the difference), hunting, fishing, guns, and other weapons. Everywhere I travel with them is at least a hundred mile round trip so we get lots of time to visit and I must admit I go to my happy place for at least 75 of those miles. I try to at least half way listen but, something about rabbit hunting does it to me every time.

Anyway, we happened to be in one of the 25 miles when I was actually listening, really listening and he happened to tell me that he’s had something on his mind every day since school started. That piqued my curiosity enough that I came back from my happy place to listen. He continued to tell me that it’s actually two things he can’t seem to get of his mind. The first one is muskrats, he wants to start trapping muskrats really bad. Apparently if he traps, skins, and sells the hides to two muskrats he can buy another trap which means he can make more money. And the other thing that’s been on his mind….well, I forget. All I remember is it was about as hillbilly-ish as trapping muskrats. Crazy boys anyway!

One thing my boys and I do have in common is our love for food! Pumpkin Spice Caramel Chex is a winner with all of them, and their friends!

I promised a no bake, no fuss Chex mix. Check this out.

Boil butter, sugar, pumpkin pie spice, and corn syrup.

Take it of the heat and add vanilla.

Add all the cereal, and any other yummy stuff you can think of! Toss it to coat with caramel!

Spread Chex mix in a wax paper lined jelly roll pan. Sprinkle with sea salt…salty sweet is the only way to go!

Pumpkin Spice Caramel Chex Mix could end just like this and everything in the world would still be right, or you could pretend like it is. At this point you could drizzle the Chex mix with white chocolate (I’m trying that next time).

This time I decided to make it all fall festive and added candy corns and M&M’s. I have a serious talent for adding chocolate to about any recipe. What can I say? I’m an addict!

Do me a favor and set aside five minutes today and make yourself a this stuff! Salted caramel, cozy pumpkin spice, crunchy cereal, nuts, and chocolate all together in one mix…it’s addicting! It will be the best five minutes you spent today!

Pumpkin Spice Caramel Chex Mix- You need to try this no bake, caramel covered Chex mix boasting all the flavors of fall! It's easy and addicting!

Ingredients
  • ¾ c. sugar
  • ¾ c. corn syrup
  • ½ c. butter
  • 2 tsp. pumpkin pie spice
  • 1 tsp. vanilla
  • sea salt, to taste
  • 8 c. cinnamon Chex cereal, or other similar cereal (You could use 8 cups of any variaty of cereal)
  • 1 c. mixed nuts
  • 1 c. shredded coconut
  • 1 c. M&M's
  • 1 c. candy corns
Instructions
  1. Line a jelly roll pan with wax paper.
  2. Add cereal, nuts, and coconut to large bowl.
  3. Over medium heat bring sugar, corn syrup, butter, and pumpkin pie spice to a gentle boil. Remove from heat and add vanilla. Stir.
  4. Pour cereal mixture into caramel. Gently toss to coat cereal with caramel.
  5. Spread cereal mix onto wax paper. Sprinkle with sea salt.
  6. Sprinkle with M&M's and candy corns. Using the back of a spoon, press candies into cereal mix so it will stick.
  7. Let cook. Serve
