Ingredients
  • 3 c. flour
  • 2 c. sugar
  • 1½ tsp. salt
  • 2 tsp. baking soda
  • ½ c. cocoa
  • ¾ c. oil
  • 1 egg
  • 1 T. vanilla
  • 3 c. grated zucchini
  • ICING:
  • ½ c. butter, softened
  • 1 T. cocoa
  • ¼ c. milk
  • 1 tsp. vanilla
  • dash of salt
  • 2 c. powdered sugar
  • Butterfinger candies, crushed
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl mix egg, oil, and sugar together. Add vanilla and zucchini.
  3. In a separate bowl add flour, cocoa, salt, soda, and cocoa. Stir.
  4. Add dry ingredients to wet ingredients. Stir to until combined.
  5. Spread batter, it will be thick, in a greased jelly roll pan.
  6. Bake for 18-20 minutes.
  7. ICING:
  8. Boil butter, cocoa, and milk in a medium saucepan.
  9. Remove from heat and add vanilla, salt, and powdered sugar. Stir until smooth. I usually use a whisk. Frost brownies while they are still warm.
  10. Sprinkle Butterfinger pieces over icing.
