Last year my family visited Mexico and we’ve been hooked on Mexican food ever since! Guacamole is a necessity around here now and we just can’t get enough of all the Mexican yumminess!

I knew I wanted to come home and incorporate more bread into my Mexican cooking. Cheesy Mexican Bread is a just a little spicy, a whole bunch cheesy, and reminds me of all those yummy tortes we ate, only this is much easier to make. Since this recipe begins with a loaf of frozen Rhodes frozen bread dough it’s super quick to make. Having frozen Rhodes bread and rolls in my freezer is a lifesaver since I don’t live near a grocery store and can’t go grab a loaf of bread, or anything else for that matter, whenever I want to!
Cheesy Mexican Bread is fantastic served with Mexican style salads, taco soup, or even alongside enchiladas! We also like substitute Cheesy Mexican Bread for chips and salsa as an appetizer! I know that can seem like carb overload, but how could you resist fresh baked Cheesy Mexican Bread?
Loading Cheesy Mexican Bread with all kinds of toppings is always a fun thing to do! Think diced avocados, fresh made guacamole, diced tomatoes, diced green chilies, and lettuce. You can also dip Cheesy Mexican Bread in sour cream or salsa! The sky’s the limit!
