Yesterday the “Big Boss” on the “little dairy” asked me to drive a four wheeler to the field and pick him up. When I got there I saw that someone was going to have to bale some small bales. I know that he is buried with his barn remodel project (I will show you pics soon). So I offered to bale the hay for him. I think he was glad to have the help and he put me to work. Branson and I started on the project. The part I really didn’t understand when I offered, was that the tractor doesn’t have air conditioning. Yikes. The whole time I was baling I was saying to my self, “Self, this is a weight loss program. You are so hot you are surely loosing weight. That means I get to eat as much ice cream as I want today”.
If you are still interested in loosing weight, you could come bale hay tomorrow. You just don’t get to eat as much ice cream as you want after!!
After I got home from a long hot day of work, I needed something fast and easy for dinner. And something that doesn’t require the oven. This is what I came up with. It was so good that I will surely be making it again.
I love quesadillas because you can throw whatever you have lurking around the refrigerator in them. I already had some fried bacon. So I diced it up. I didn’t have any grated cheese, and I was too hot and lazy to grate it, and there weren’t any kids around to do it. So I just sliced it.
Here’s how you start to assemble the quesadilla. Melt some butter in a medium heat skillet. I used a griddle because I needed to make a few of them. Put on tortilla shell down. Cover with grated or sliced cheddar cheese. Sprinkle with crumbled bacon.
Top bacon with sliced or grated Swiss cheese. The cheese traps the bacon and helps is to stay in your quesadilla.
If you want to, and why wouldn’t you? Squirt some ranch dressing on top of the cheese. Top with another tortilla shell.
Once the tortilla is golden flip it over. Continue to cook until the other side is golden and you have yummy melted cheese.
Place shredded lettuce on a plate. Cut quesadillas into wedges and place on lettuce. Add diced tomatoes and a drizzle of ranch dressing to the top. Serve immediately.
This is a fun spin on a classic BLT. All that cheese makes it even more tempting!!
- 2 flour tortilla shells
- ½ T butter
- ⅓ cup grated cheddar cheese
- ⅓ cup grated Swiss or mozzarella cheese
- ⅓ cup cooked and crumbled bacon
- 2 T ranch dressing
- ½ cup shredded lettuce
- ⅓ cup diced tomatoes
- 1 T ranch dressing
- Melt butter in a skillet over medium heat.
- Place one tortilla shell in skillet.
- Sprinkle cheddar cheese onto tortilla in skillet. Sprinkle with crumbled bacon. Sprinkle with Swiss cheese. Drizzle with ranch dressing.
- Top with remaining tortilla shell.
- Once first tortilla shell is golden brown, flip the quesadilla over. Cook other side until golden brown.
- Remove from skillet and cut quesadilla into wedges.
- Layer lettuce, quesadilla and tomatoes on a plate. Drizzle with additional ranch dressing.
